Roasted Garlic Chipotle Aioli

Aioli is basically a fancy word for a mayo based sauce or spread that is usually flavored with garlic, herbs or spices. The chef way to make this homemade aioli starts with egg yolks and olive oil. Those are the main ingredients to make mayonnaise in order to make this spread or dip. It's so much easier when you start with good ole mayonnaise!

Ketchup, mayo or ranch are easy go to dips or spreads, but this one is super easy and it will definitely impress your family and friends.

It pairs well with crispy onion rings, shrimp, fried string beans, french fries, a bun for a sandwich and more!

Roasted Garlic Chipotle Aioli


Ingredients

  • 1 cup light mayonnaise

  • 1 ½ tbsp chipotles in adobo

  • 5 garlic cloves, roasted

  • Half lime, juiced (about 1 ½ tbsp)

  • ¼ tsp kosher salt

  • ¼ tsp cracked black pepper


Directions

  1. Saute garlic cloves in a small skillet with a drizzle of olive oil and allow to cook down and get golden brown color. Or preheat the oven to 400 degrees Fahrenheit and wrap the garlic cloves with a drizzle of olive oil in foil and bake for about 20 minutes.

  2. Using a blender or food processor, pulse together the mayo, lime juice, salt, pepper, garlic, and chipotles until smooth and creamy.

  3. Pour in a serving dish and serve as a dip or spread.


Note: It can be served room temperature or chilled. For a spicier aioli, add an extra tablespoon of chipotles in adobo.

This recipe calls for light mayonnaise, its what I used. You can certainly use any type of mayonnaise.
