Pumpkin Season is back y'all ! Which means...the holidays are just around the corner.
I made a trip to Trader Joes and bought at least 6 cans of pumpkin puree because I need it, of course! When we make it to the month of November, cans of pumpkin puree will probably be out of stock or they'll only allow customers to buy 2 cans at most.
As of now, the month of October, every trip I make to the store. I will bring back some cans of pumpkin, that way I will be fully stocked when November and December come around. I'll never run out :)
Long story short, I will be making pumpkin ALMOST everything.
These pumpkin muffins are super easy to make. They're fluffy, slightly sweet, and the pops of chocolate chips are perfection.

Pumpkin muffins with chocolate chips
Ingredients
1 ⅔ cups all purpose flour
2 tbsp baking powder
½ tsp baking soda
½ tsp kosher salt
2 eggs
⅓ cup vegetable oil
1 ⅓ cups granulated sugar
2 tbsp water
½ tsp pumpkin pie spice
½ tsp cinnamon
¼ tsp nutmeg
1 cup semi sweet chocolate chips *add more to your preference
Directions
Preheat the oven to 375 degrees Fahrenheit and spray a muffin baking pan with nonstick spray.
In a medium size bowl, whisk to combine the flour, baking powder, baking soda and salt. Set aside.
In a large mixing bowl whisk to combine the eggs, oil, sugar, pumpkin puree, pumpkin pie spice, cinnamon, and nutmeg. Then, whisk in the flour mixture until combined. Mix in the chocolate chips.
Distribute the batter evenly into the muffin tins and top with a couple more chocolate chips. Bake for 22 minutes.
